2014 Napa Valley Sauvignon Blancwinemaking:“Our Sauvignon Blanc is fermented and aged sur lees [on yeast] in neutral Burgundian barrels for 5 months. The wine does not go though malolactic, which allows it to maintain fresh fruit characteristics and crisp acidity. The lees are stirred carefully once a week during its time in barrel. The Ucibelli Vineyard has been owned and run by the Ucibelli family since the mid 1950’s. Pope Valley is a region of the Napa Valley north east of St. Helena and Howell Mountain. It is an area of the Napa Valley known for Bordeaux varietals including Sauvignon Blanc, which grows very well in the warm climate.
